Gluten-Free Sun-Dried-Tomato Pesto: Pesto with Sun-Dried Tomatoes in addition to the standard garlic, olive oil, and pine-nuts - Excellent and Versatile!

This homemade gluten-free pesto can be used on rice pasta (or other gluten-free pasta) as a sauce, or it can be used on chicken, potatoes, and a wide variety of other dishes.

Gluten Free Pesto Recipe

Ingredients
¼ Cup Toasted Pine Nuts
3 Ounces Sweet Onion
16 Halves, Sun Dried Tomatoes (jarred in Oil)
2 Large Garlic Cloves
¼-1/3 Cup Fresh Basil
½ Cup Olive Oil 
(or, ¼ cup of the oil from jarred Sun Dried Tomatos,
plus ¼ cup Olive Oil)
Directions

In food processor chop, onion, sun dried tomatoes, garlic and basil. Add pine nuts and roughly chop in food processor (want to only slightly chop the pine nuts).
